Method to cook.
- Soak bird nest for 4-6 hours (not more than 6 hours) with drinking water. Once bird nest is in half transparent, drain it and put them in double boiler with another bowl of drinking water.
- Double boil for 45 minutes.
- Add in rock sugar. You can turn off the heat and just let the rock sugar slowly dissolve. Taste and add additional rock sugar if you'd like. The flavour should be delicately sweet. Serve warm.
